2016 4runner SR5 4x4. So I have lifted my 4runner 3" front and 2" rear using Rough Country's front strut spacer and rear spring spacer along w/ longer rear RC shocks and a front 1" diff drop kit. I plan to switch to 285/70R17 tires aka 32.7" tires. However, I heard people saying they still have rubbing issue and need to remove mud …

Can you physically place a 285 on a 7" rim, yes absolutely. , Even with the wider 285/70r17 you will gain about an inch of clearance on the inside vs stock, so control arm clearance shouldn't be an issue. However, the narrower (~1/2" on either side) 255/80r17 will have more clearance at full lock that could reduce the chance of needing a body mount chop or keeping it more mild.
